The most popular format for team-building is something I call ‘flavour circuit’ which enables all participants to make all the dishes, rather than just working on their one dish with their team. It’s a lot of fun and very interactive.

1. Flavour Circuit

We would break up a group of say 80 people into 8 teams – 10 people per team

Upon arrival, your group will mingle while enjoying an hors d’oeuvre

I will then welcome the guests, introduce the chefs, discuss the flow and agenda and competition criteria for the event.

The group will divide into 8 teams – each team will go to their designated cooking area, and, in rotation, prepare and eat their dishes.

Once the circuit is completed, your group will be served dessert (choose in advance either Best Ever Apple Cake with Warm Honey Sauce or Bourbon Chocolate Cake with Whipped Cream and Berries) and team cooking awards will be presented.

SAMPLE STATIONS (choose 4 for your event)

1. Beef Tenderloin with Red Wine Shallot Sauce
Each team will learn how to properly sear and cook a centre-cut beef tenderloin.

2. Sushi Rolling Station
California rolls with soy sauce, wasabi and pickled ginger will be prepared by each participant

3. Mixed Greens with Pears, Pecans, Goat Cheese and Raspberry Chipotle
Each team member will prepare and plate their own salad.

4. Potato Gnocchi with Porcini Mushroom Sauce
Team members will learn how to make and roll gnocchi from scratch.

5. Handmade Fettuccine with Sage Butter Sauce
Each team will learn how make fresh pasta.

6. Pad Thai
Each team will make their own Thai noodles with Vegetables and Peanut Sauce served in take-out boxes with chopsticks.

7. Phyllo Triangles
Each team will learn how to work with phyllo. Choose 1 from the following fillings: Feta, Roasted Pepper and Basil; Goat Cheese, Sundried Tomato and Kalamata Olives; Moroccan Sweet and Spicy Beef

8. Vegetarian Soi Gau “Water Dumplings”
Each team will learn the proper technique for making and frying Asian dumplings.

2. Sit-Down  Meal

For the sit-down option, the group will divide into teams and each team will work on a specific part of the meal.
The most popular sit-down menu is:

Crostini with White Bean and Rosemary or Crostini with Spring Pea Puree (choose one)

Mixed Greens with Pears, Pecans, Goat Cheese and Raspberry Chipotle or Baby Arugula and Kale with Herbs and Roasted Almonds (choose one)

Seared Beef Tenderloin with Balsamic Honey Sauce or Prosciutto wrapped Beef Tenderloin with Red Wine Reduction (choose one)

Spring Vegetable and Herb Risotto or Roasted Butternut Squash and Sage Risotto or Roasted Smashed Potatoes (choose one)

Apple Strudel with Vanilla Whipped Cream or Meringue Nests with Fresh Berries and Whipped Cream

We can discuss other menu options with you once we get more information about your group. Choose from Seasonal Entertaining, Thai, Italian, Indian, Moroccan. Or we can work together to customize a menu of 5 dishes.

We need to know of any allergies or food restrictions (nuts, vegetarian, kosher, lactose intolerant) at least 7 days prior to your event date.

3. Iron Chef

If your group wishes, we can make the event a competition. My assistants and I evaluate and then vote on the various dishes created in the class. Plate presentation, creativity, teamwork, team spirit and cleanliness of workspace all figure into determining the winners.
